Post training fuel - Slow cooker pulled chicken pittas
A delicious meal which can be eaten by the family all together, or at different times. Perfect for busy active families and the evening parent taxi service!
Ingredients (serves 4-5)
Method
Ingredients (serves 4-5)
- 4 chicken breasts
- 1-2 tbsp of sriracha (depending on how hot you like it)
- 2 tbsp tomato puree
- 1 tbsp honey or maple syrup
- 2 tsp smoked paprika
- 1 tsp garlic granules
- 1 tsp cajun or Piri Piri seasoning
- 1 tsp chilli powder
- 1 lime juiced
- 1 thumb-sized piece of ginger grated (I don't bother peeling it -too much faff!)
Method
- Put all the ingredients into a slow cooker and cook on high for approx 3-4 hours. You may want to add a little bit of water if it looks like it is drying out (I've never had this issue).
- Shred the chicken and leave it on the warm setting.
- Serve with toasted pittas, yogurt, rice and your veg of choice. We love red cabbage picked with lime juice and a little salt.
