Post training fuel - Slow cooker pulled chicken pittas

A delicious meal which can be eaten by the family all together, or at different times. Perfect for busy active families and the evening parent taxi service!

Ingredients (serves 4-5)
  • 4 chicken breasts 
  • 1-2 tbsp of sriracha (depending on how hot you like it)
  • 2 tbsp tomato puree
  • 1 tbsp honey or maple syrup
  • 2 tsp smoked paprika
  • 1 tsp garlic granules
  • 1 tsp cajun or Piri Piri seasoning
  • 1 tsp chilli powder
  • 1 lime juiced 
  • 1 thumb-sized piece of ginger grated (I don't bother peeling it -too much faff!)

Method

  1. Put all the ingredients into a slow cooker and cook on high for approx 3-4 hours. You may want to add a little bit of water if it looks like it is drying out (I've never had this issue).
  2. Shred the chicken and leave it on the warm setting.
  3. Serve with toasted pittas, yogurt, rice and your veg of choice. We love red cabbage picked with lime juice and a little salt.
