Leftover cereal bars

  • 90g cereal, crushed (we used cornflakes but we think other flaked cereal would work well, as would Weetabix)
  • 110g self-raising flour
  • 90g sugar (we used light brown)
  • 1tbs honey
  • 100g raisins or sultanas (other dried fruit would also work)
  • 70g desiccated coconut
  • 1 egg beaten (or a vegan substitute like a banana or apple puree)
  • 150g butter or vegan butter melted
  1. Preheat oven to 160C fan. Grease and line a 30x20cm pan with baking paper, use a silicon mould or cupcake cases. 
  2. Bung all the ingredients in the bowl and mix well. 
  3. Add into the pan or cases and use hand to press down evenly.
  4. Bake for 20-25 mins (pan) or 15-20 mins (cases) or until lightly browned.
