Leftover cereal bars
Ingredients
- 90g cereal, crushed (we used cornflakes but we think other flaked cereal would work well, as would Weetabix)
- 110g self-raising flour
- 90g sugar (we used light brown)
- 1tbs honey
- 100g raisins or sultanas (other dried fruit would also work)
- 70g desiccated coconut
- 1 egg beaten (or a vegan substitute like a banana or apple puree)
- 150g butter or vegan butter melted
- Preheat oven to 160C fan. Grease and line a 30x20cm pan with baking paper, use a silicon mould or cupcake cases.
- Bung all the ingredients in the bowl and mix well.
- Add into the pan or cases and use hand to press down evenly.
- Bake for 20-25 mins (pan) or 15-20 mins (cases) or until lightly browned.
